Naturally frozen Vidal grapes were hand-harvested from Niagara-on-the-Lake vineyards at -10°C. Pressed frozen, each grape releases only one drop of pure extract. Fermented at a cool temperature to retain fruit concentration, then aged in older French and American oak barrels for four months for added complexity.

Bright yellow gold colour with an aromatic bouquet of honey, delicate spice and orange marmalade. A luscious mouth-feel with explosive flavours of white peach, sweet citrus, sweet spice and caramel. Notes of honey and tropical fruit linger through on the finish. The amazing concentration of acidity softens the sweetness of the wine and leaves a refreshing finish. Best enjoyed now through 2017.

Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. During a meal with paté or foie gras; prosciutto and melon; Thai mango salad; or as a wonderful companion to spicy Asian cuisine or Indian curries. After a meal pair with fruit based desserts with apricots, pears, sweet citrus and tropical fruit; nut based cakes; Christmas cake; spiced fig cakes. For the cheese course, Icewine pairs with soft, blue veined cheese, creamy brie or aged cheddars.
