Baco Noir Poached Pear
Wine pairing: Family Series Baco Noir 2009 VQA

Ingredients
1 bottle Family Series Baco Noir
5 cloves
1 star anise
5 black peppercorns
1 sprig rosemary
1/2 stick cinnamon
4 whole pears
1 cup plain yogurt
1/4 cup toasted walnuts (roughly chopped)
Method
Heat the wine, spices and herbs in a pot over high heat. Peal the pears and core from the bottom (keep the pears whole). Place in the boiling wine and turn down to a simmer.
Simmer for 2 minutes, then remove from the heat and leave to cool. Once cool store the pears in the wine until ready to serve. When serving remove from the wine and slice into a fan. Place the poaching wine in a pot and boil until it slightly thickens. Mix the walnuts and yogurt. Serve in a bowl with the fanned pears. Drizzle with the reduce wine and serve.
